This delicious salad mixes fresh summer ingredients with the classic flavors of a Greek Salad.
Ingredients:
- 2 zucchini, thinly sliced
- 1/2 red onion, thinly sliced
- 10 oz cherry tomatoes, cut in half
- 4 oz feta cheese, cubed/crumbled
- 1 cup olives (we mixed kalamata and black)
For the dressing:
- 1/4 cup olive oil
- 3 Tbsp white vinegar
- Juice of 1 lemon
- 1 Tbsp parsley
- Salt and pepper to taste
Instructions:
- Cut all of the vegetables and cheese. Using a mandolin to slice the zucchini really can speed up the process!
- Prepare the dressing by stirring all ingredients together.
- Mix the dressing and vegetable mixture together and serve!
This salad is best eaten the same day it is made.
