Greek Zucchini Salad 

This delicious salad mixes fresh summer ingredients with the classic flavors of a Greek Salad. 

Ingredients: 

  • 2 zucchini, thinly sliced
  • 1/2 red onion, thinly sliced
  • 10 oz cherry tomatoes, cut in half
  • 4 oz feta cheese, cubed/crumbled
  • 1 cup olives (we mixed kalamata and black)

For the dressing:

  • 1/4 cup olive oil
  • 3 Tbsp white vinegar
  • Juice of 1 lemon
  • 1 Tbsp parsley
  • Salt and pepper to taste

Instructions: 

  1. Cut all of the vegetables and cheese. Using a mandolin to slice the zucchini really can speed up the process! 
  2. Prepare the dressing by stirring all ingredients together. 
  3. Mix the dressing and vegetable mixture together and serve! 

This salad is best eaten the same day it is made.
